Ingredients for 8 servings:

  • 200 g wheat flour
  • 100 g butter
  • 1 egg(s)
  • Salt
  • Water, cold
  • 200 g bacon, diced
  • 1 large onion(s), diced
  • 250 g cheese (Emmental), grated
  • ⅛ liter milk
  • ⅛ liter cream
  • 3 eggs
  • Salt
  • pepper
  • e.g. herbs (chives, parsley, etc.)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

For the dough, knead the flour, butter, egg, and salt into a smooth dough. If the dough is too dry, gradually add cold water, a tablespoon at a time. Then line a springform pan with the dough, filling it all the way to the edges. For the filling, whisk the eggs with milk and cream. Add the bacon cubes and cheese, and season with salt and pepper. Finally, mix in the chopped herbs. Pour the filling onto the dough and bake in a preheated oven at 180°C on the middle rack for about 40 minutes. The surface should be a lovely golden brown.
