Mole Cake with Difference

The perfect mole cake with difference recipe with a picture and simple step-by-step instructions.

  • 3 piece Eggs
  • 40 g Coconut blossom sugar
  • 150 ml Milk
  • 3 tbsp Baking cocoa
  • 1 packet Baking powder
  • 50 g Coconut flour
  • 100 g Protein powder
  • 500 g Lowfat quark
  • 150 g Cream cheese
  • 30 g Protein powder
  • 2 leaf Gelatin white
  1. First, beat the eggs and coconut blossom sugar and then stir in the milk and baking cocoa. Then knead the baking powder, coconut flour and 100g protein powder (chocolate). Put everything in a mold (24) and bake at 180 ° C top and bottom heat for 30-40 min (stick sample), let cool and hollow out the inside. (leave about 2cm margin)
  2. For the filling: let the gelatin soak. Heat low-fat quark, cream cheese, 30g protein powder and sweetness of your choice. (We didn’t need any additional sweetness) Mix the gelatine with the mixture and spread it on the base.
  3. I recommend first chilling the cake for several hours and then spreading the hollowed out crumbly over the cake. For decoration I still had cherries in the freezer and put them on top.
