Mom's jacket potatoes with quark

Ingredients for 4 servings:

  • 8 m.-sized potatoes
  • 500 g quark, 20%
  • 1 cup crème fraîche
  • 1 bunch of chives
  • 4 eggs
  • Mustard
  • Sunflower oil
  • salt and pepper
  • Spice(s) and herbs to taste
  • possibly milk

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Vegetarian, quick to make, uncomplicated

Peel the potatoes and bring to a boil in salted water; the cooking time depends on the size of the potatoes. Meanwhile, boil the eggs until hard-boiled, then peel and separate the yolks from the whites. Cut the whites into small pieces and place in a bowl. Add the quark, crème fraîche, and chopped chives and mix everything well. Separately, mash the egg yolks with a little mustard (about a teaspoon), oil (about a tablespoon), pepper, and salt. Once you have a smooth mixture, mix everything with the remaining ingredients and season to taste. If you prefer the quark mixture to be a little thinner, you can add a little milk. Other spices or herbs, such as paprika or dill, can be added if desired. Serve the whole thing with hot boiled potatoes. It tastes great with smoked salmon or oven-baked tomatoes topped with cheese. We also think it tastes great on its own.
