Apple fritters with vanilla sauce

Ingredients for 4 servings:

  • 2 egg whites
  • 3 tbsp sugar
  • 1 vanilla pod(s), pulp
  • 4 tbsp, heaped flour
  • 50 ml milk
  • 300 ml milk
  • 2 tsp, heaped cornstarch
  • 4 tbsp sugar
  • 2 vanilla pods, the pulp
  • 2 egg yolks
  • 2 apples
  • Fat for the fryer/pan, for frying

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes

First, prepare the vanilla sauce: Separate the eggs. Bring 3/4 of the milk to a boil with the sugar. Mix the egg yolks, cornstarch, and the remaining milk, then immediately stir this mixture into the boiling milk and bring to a boil, stirring constantly. Set aside. If the sauce thickens further and is too thick for you, simply add a small splash of milk and stir, and the sauce will be a little more liquid again. Batter for the apples: Beat the egg whites with 1 tablespoon of sugar until stiff. Make a batter with the 2 tablespoons of sugar, flour, vanilla bean pulp, and milk, then fold in the stiffly beaten egg whites. Meanwhile, heat the frying oil. Peel the apples, core them with an apple corer, then cut the apple into 1 cm thick rings and add them to the batter. Turn until the apple is completely coated in the batter. Immediately fry in the hot frying oil until the batter is golden yellow. Remove from the oil and drain on kitchen paper. Serve with the vanilla sauce.
