Mom's vegan lentil soup

Ingredients for 3 servings:

  • 250 g smoked tofu
  • 3 onions
  • 2 carrots
  • 4 potatoes
  • 250 g lentils
  • e.g. olive oil
  • lots of tomato paste, about 1/2 tube, more or less if needed
  • Vegetable broth, approx. 1 liter, more or less if needed
  • Water, approx. 1 liter, more or less if needed
  • n. B. Vegetable stock powder
  • e.g. balsamic vinegar
  • e.g. parsley, chopped
  • e.g. salt and pepper
  • n. B. sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 45 minutes

Peel the onions, potatoes, and carrots and dice them along with the smoked tofu. Sauté the onions and smoked tofu in olive oil in a pan, then add the potatoes and carrots. Once everything has taken on some color, add plenty of tomato paste and sauté. Add the broth and deglaze with water. Add the lentils and let everything simmer for about an hour. Finally, season everything again with vegetable broth powder, balsamic vinegar, salt, pepper, sugar, and parsley.
