Monday rolls

Ingredients for 1 servings:

  • 700 g flour (1050 or whole grain)
  • 125 g oat flakes, fine
  • 2 packets of dry yeast
  • 250 g edible bran (wheat bran)
  • ½ tsp salt
  • 1 tsp sugar
  • 250 ml milk
  • e.g. nuts, chopped raisins, grated carrots or apples
  • e.g. sunflower seeds, pumpkin seeds, oat flakes or linseed for sprinkling

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Makes 12 wholemeal rolls that you can eat every day

Mix all dry ingredients together in a bowl and, if desired, add chopped nuts, almonds, raisins, grated carrots, or grated apple. Warm the milk to lukewarm and gradually mix it with the dry ingredients. Slowly add enough water to form a smooth dough. Knead until your fingers are clean. Place flour on a surface and knead the dough vigorously for about 5 minutes, then lightly oil it and knead again. Cover the dough and let it rise in a bowl for 1 hour at room temperature. Knead the dough again and form rolls. Place the rolls on a baking sheet and let them rise for another 30 minutes. Then cut a cross into the tops of the rolls, brush with water, and sprinkle with sunflower seeds, pumpkin seeds, oats, or flaxseed, if desired. Bake for about 30 minutes at 180°C fan-assisted oven.
