Ingredients for 1 servings:
- 750 g apples
- 150 g sugar
- 200 g raisins
- 200 g hazelnuts, chopped or walnuts
- 1 pinch of clove(s), ground
- 1 pinch of cinnamon
- 1 tsp cocoa powder
- 1 shot of brown rum
- 500 g flour (wheat flour)
- 1 ½ packets of baking powder
Instructions

Coarsely grate the peeled and cored apples, add the sugar to the apples, and mix. Let it sit for at least 6 hours, but ideally overnight. Mix the raisins, chopped hazelnuts or walnuts, a pinch each of clove powder and cinnamon, the cocoa powder, rum, wheat flour, and the baking powder into the apple-sugar mixture. Pour the batter into the 28 cm loaf pan, smooth it out, and bake on the middle rack of a preheated oven at 180°C (electric oven) for about 80 minutes. Variations: You can vary the recipe according to your taste. Sometimes you can use rye flour or corn flour instead of wheat flour, or sometimes you can add fresh and dried herbs such as parsley, basil, tarragon, caraway, etc. instead of cinnamon. The apple bread will be heartier if you use corn and grated carrots instead of the raisins.
