Monkfish on wakame

Ingredients for 2 servings:

  • 400 g monkfish fillet(s)
  • 15 g wakame
  • 1 tsp, heaped ginger, fermented
  • 15 black olives, pitted
  • 15 tomatoes, halved
  • 2 tbsp olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

from the oven, for a casserole dish

Preheat the oven to 200 degrees Celsius (top/bottom heat). Soak the seaweed in water for at least 2 hours. Drain the water. Cut the fish into 4 equal pieces. Halve or quarter the tomatoes and halve the olives. Finely chop the ginger. Mix everything in a baking dish and add the fish. Cover the fish with the vegetables. Drizzle with olive oil. Braise in the oven on the middle rack for about 35 minutes.
