Moorish pork fillet skewers

Ingredients for 3 servings:

  • 250 g pork fillet(s)
  • 1 garlic clove(s)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt
  • 1 tsp cumin
  • 1 pinch of coriander, freshly ground
  • 1 pinch of chili powder
  • 1 tbsp paprika powder

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Tapas

Cut the pork fillet into strips lengthwise along the grain. Crush the garlic clove, grind the cumin and coriander, and mix with olive oil, lemon juice, salt, chili powder, and paprika. Add the meat strips to the marinade and let it marinate for at least 2 hours. Then place them on skewers, slightly wavy, and briefly sear them in a grill pan without oil. Be careful, the meat cooks very quickly. Depending on the number of tapas you’re having, this amount will be sufficient for more or fewer people.
