Morel cream sauce

Ingredients for 4 servings:

  • 12 g morels, dried
  • 1 shallot(s)
  • 50 g butter
  • 100 ml white wine
  • 125 ml milk
  • 125 ml cream
  • Salt
  • pepper
  • lemon juice
  • 1 tbsp cream, whipped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Soak and clean the morels according to the instructions. Sauté the shallots in 20g of butter. Pour in the wine and reduce to about 2 tablespoons. Add the milk and cream and simmer until creamy. Strain the sauce through a sieve and season with salt, pepper, and lemon juice. Sauté the morels in the remaining butter, season with salt and pepper, and mix with the whipped cream into the morel cream sauce.
