Ingredients for 1 servings:

  • 2 carrots, peeled and finely grated
  • 100 g butter or margarine, liquid
  • 250 g cane sugar
  • 4 eggs
  • 250 g wheat flour
  • 2 tsp baking powder
  • 1 tsp vanilla sugar
  • 1 tsp cinnamon powder
  • 1 pinch of salt
  • 50 g butter, soft
  • 200 g cream cheese
  • 150 g powdered sugar
  • ½ lemon(s), grated peel

Instructions

Working time approx. 30 minutes; Rest time approx. 15 hours; Total time approx. 15 hours 30 minutes

Beat the eggs and sugar until frothy, then fold in the grated carrots and butter. Combine the flour, baking powder, vanilla sugar, cinnamon, and salt and stir into the batter. Pour the batter onto a greased baking sheet (approx. 25 x 30 cm) and bake in the center of the oven at approximately 180–200°C for 15 minutes. Let the cake cool. For the glaze, combine all ingredients and spread over the cake. Then cut into 20 equal pieces.
