Mozzarella breaded à la Gabi

Ingredients for 4 servings:

  • 500 g toast bread
  • 500 g mozzarella, cut into 1 cm thick slices
  • 4 eggs
  • 3 tbsp milk
  • 200 ml milk
  • 1 cup breadcrumbs
  • 100 ml rapeseed oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Using a glass or similar tool, cut out 7 cm diameter slices from the slices of toast and place a slice of mozzarella between each slice. Whisk the eggs with 3 tablespoons of milk in a small bowl. Pour the 200 ml of milk into another bowl and sprinkle the breadcrumbs on a sheet of parchment paper. First, dip each sandwich in the milk, press the edges together, coat both sides with the breadcrumbs, and roll the edges in the breadcrumbs. Then, dip the sandwiches in the egg-milk mixture, fry in hot oil until golden brown, and remove the fat from the breadcrumbs on kitchen paper.
