Ingredients for 4 servings:
- 750 g tomatoes, ripe
- 2 onions
- 2 cloves garlic
- 4 chicken breast fillets
- 6 tbsp olive oil
- 1 bunch of basil
- 50 g black olives
- 250g mozzarella
- Salt
- pepper
Instructions

Wash the tomatoes, remove the stems, and cut into 1 cm thick slices. Grease 4 serving dishes (or a large baking dish) with olive oil and line with the tomato slices. Season the tomatoes with salt and pepper. Preheat the oven to 225°C. Peel and finely dice the onions and peel the garlic. Wash the chicken breast fillets and pat dry. Heat 1 tablespoon of oil in a pan and cook the onions until translucent. Press in the garlic and sprinkle it over the tomatoes. Heat the remaining oil in the pan until very hot and sear the chicken breast fillets on both sides. Season with salt and pepper, then add to the dishes. Wash the basil and shake dry, picking off the leaves. Pit the olives. Divide both among the dishes, reserving a few basil leaves for garnishing. Slice the mozzarella and place on top of the chicken breast fillets. Bake in the oven (Gas Mark 4; fan oven 200°C) for about 15 minutes. Garnish with basil.
