Mozzarella crepes

Ingredients for 1 servings:

  • 500 ml water
  • 5 eggs
  • 100 g flour
  • 1 pinch(s) of cayenne pepper
  • 1 pinch of salt
  • 2 tbsp oil
  • 4 tomatoes, sliced
  • 2 tbsp fresh basil, chopped
  • 300 g mozzarella, sliced
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix eggs, water, flour, and spices into a batter and let it rest for 15 minutes. Heat the oil, cook small crêpes, and place them on a greased baking sheet. Cut the mozzarella into small cubes and arrange them on the crêpes. Place the tomato slices on top of the crêpes and sprinkle with chopped basil. Place the baking sheet in the preheated oven and bake the crêpes at 220°C for 10-15 minutes until golden brown. Sprinkle with salt and pepper and serve immediately.
