Mozzarella summer salad with strawberries

Ingredients for 2 servings:

  • 1 small head of lettuce, of your choice
  • 1 handful of lamb’s lettuce
  • 1 handful of cherry tomatoes
  • 1 handful of strawberries
  • 2 balls of mozzarella, approx. 125 g each
  • 1 m.-sized onion(s)
  • 1 handful of pine nuts
  • 100 ml sunflower oil
  • 1 shot of balsamic vinegar
  • 1 tbsp, strained mustard, medium hot
  • salt and pepper
  • 1 dashes of water

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash both lettuces, the strawberries, and the tomatoes. Halve the strawberries and tomatoes. Cut the onion into thin rings and the mozzarella balls into small pieces. To serve, arrange the two salads on two large plates and arrange the tomatoes around the edges. Then arrange the mozzarella, strawberries, onion rings, and pine nuts in the middle. For the balsamic dressing, add about 100 ml of sunflower oil to a small bowl. One after the other, add the dash of balsamic vinegar, the mustard, a pinch of salt, about 2 pinches of pepper, and the splash of water and mix. Then pour the dressing over both salads.
