Ingredients for 2 servings:
- 800 g watermelon(s), which corresponds to about 1/4 of a whole melon
- 100 g feta cheese
- 1 handful of arugula
- 3 tbsp olive oil
- 2 tbsp fruit vinegar
- salt and pepper
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
quick summer salad
Cut the melon into bite-sized pieces or corer it as desired. Crumble the feta cheese, wash, dry, and tear the arugula. Combine the ingredients in a bowl, add the oil and vinegar, and season with salt and pepper. Tips: I’ve made this salad so many times with different ingredients. If you don’t have arugula, simply finely chop spring onions and add them to the salad. Black olives give the salad an additional Mediterranean touch. I could also imagine using mozzarella.
