Mozzarella-Zucchini Towers

Ingredients for 4 servings:

  • 200 g zucchini, preferably small
  • ½ chili pepper(s)
  • 1 clove(s) garlic
  • some basil
  • 8 black pitted olives
  • 2 tsp capers
  • 1 ½ tbsp lemon juice
  • 1 tbsp Balsamic vinegar, white
  • 3 tbsp olive oil
  • Salt
  • Pepper, from the mill
  • 1 pinch(s) of sugar
  • 2 balls of mozzarella, 125 g each

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Cut the washed zucchini into very small cubes. Deseed the chili pepper, peel the garlic, and finely dice both. Finely chop the basil and drained olives. Place the zucchini, chili, garlic, basil, olives, and drained capers in a bowl. Add the lemon juice, olive oil, vinegar, salt, pepper, and sugar and mix well. Let it sit for another half hour. Slice the mozzarella and layer it with the zucchini tartare. Start with the mozzarella. The top layer should be zucchini. Finally, garnish with olives, capers, and basil.
