Ingredients for 1 servings:
- 150 g muesli (e.g. MorgenStund’ basic porridge, unsoaked)
- 45 g oat flakes
- 90 g oat flour
- ½ tsp cream of tartar baking powder
- 30 g almond(s), sliced
- 60 g cane sugar, or 90 g erythritol
- 2 eggs
- 60 g butter
- 60 g coconut oil
- Chocolate drops (Choco-Chunks)

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Simple and delicious cookies
Melt the butter and coconut oil in the oven/pan/microwave. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Weigh all the dry ingredients and combine. Whisk the melted fat with the eggs and add to the dry ingredients. Mix everything well (a spoon is sufficient for this; you don’t need a mixer). Place mounds of dough (any size you like—I bake both smaller, thicker doughy cookies and large, flat, crispy cookies—both are delicious) on a baking sheet lined with baking paper and lightly flatten them to a height of about 5-10 mm (the cookies will barely spread and will only rise slightly). Sprinkle with chocolate chunks, if desired (or add them to the batter right from the start). Bake for 13-15 minutes, until the edges are golden brown. These cookies are delicious both hot and cold and are also suitable for baking beginners. The dried fruit in my favorite muesli gives the cookies a special flavor!
