Muesli cookies made from soy milk

Ingredients for 1 servings:

  • 160 g margarine, vegan
  • 300 g sugar
  • 175 g flour
  • ½ tsp baking powder
  • 50 g flaxseed, crushed
  • 1 tsp cinnamon powder
  • ½ tsp salt
  • 125 ml soy milk (soy drink)
  • 50 g raisins
  • 50 g dates, finely chopped
  • 50 g walnuts or hazelnuts, finely chopped
  • 250 g oat flakes
  • some vanilla flavor (a few drops)

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Preheat the oven to 180°C. Line a large baking sheet with baking paper. For the cookies, cream together margarine and sugar in a large mixing bowl until creamy. Sift in the flour and baking powder and stir in along with the flaxseed, cinnamon, and salt. Whisk the soy milk and vanilla extract in a bowl and add to the batter along with the raisins, finely chopped dates, finely chopped walnuts, and oats. Mix everything well. Break off a small portion of the dough and shape it into a ball about 4 cm in diameter. Place it on the prepared baking sheet and flatten slightly. Make about 30 cookies this way. Bake in the oven for 15 minutes until golden brown. Let cool briefly on the baking sheet, then transfer to a wire rack.
