Muesli-quark-fruit cookies without sugar

Ingredients for 1 servings:

  • 250 g Skyr or low-fat quark
  • 1 m.-sized egg(s)
  • 50 g coconut flour
  • 20 g spelt bran
  • some raspberries or fruit of your choice, frozen or fresh
  • 20 g chia seeds
  • 2 tsp psyllium husks
  • 1 tsp baking powder
  • n. B. Sweeteners, e.g. erythritol (sugar substitute) or Flavdrops vanilla
  • e.g. chocolate drops, sugar-free or nuts

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Mix the quark with the egg, sweetener, and raspberries. Add the chia seeds, baking powder, and the other ingredients and knead using the dough hook on a food processor or hand mixer. The dough is easy to work with by hand. Form 25 small balls from the mixture. Place these on a baking sheet lined with baking paper. Decorate with sugar-free chocolate drops and nuts. Bake the cookies on the middle rack of a preheated oven at 180°C (top/bottom heat) for about 20 minutes. They will brown quickly, so be careful. After baking, let them cool completely; then they can be easily removed from the baking paper. A filling snack to satisfy your sweet tooth without the guilt.
