Muffins with barberry berries (sourthorn)

Ingredients for 26 servings:

  • 200 g butter or margarine
  • 230 g sugar
  • 1 packet of vanilla sugar
  • 4 eggs
  • 500 g flour
  • 2 packets of baking powder
  • 1 pinch of salt
  • 15 tbsp milk
  • 30 g raisins
  • 1 handful of dried barberries
  • 1 small bottle(s) flavoring (lemon)
  • powdered sugar
  • Food coloring, red
  • ½ lemon(s), the juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Basic recipe, which can be modified with any other berries

Soak the raisins and barberries. Beat the eggs, sugar, and vanilla sugar until fluffy. Then add the margarine or butter and mix. Now add the remaining ingredients, such as flour, baking powder, salt, baking flavor, and milk. Drain the soaking water and stir the fruit into the batter. The batter should be smooth. Not too thick, but not too thin. It shouldn’t run off the whisk. Pour half of the batter into the paper baking cups, which are then placed in a suitable muffin tin. Bake in a preheated oven at 180°C or gas mark 3 for about 15-20 minutes. Whisk together the lemon juice, red food coloring (just a little), and powdered sugar to make a glaze and brush it onto the muffins. I then add a few barberries and blackthorn for decoration.
