Ingredients for 4 servings:

  • 500g pasta
  • 3 sausages (beef sausages)
  • 2 chili peppers, fresh
  • 1 can/n tomato(s), date
  • 4 cloves of garlic
  • 1 m.-sized onion(s)
  • 1 small onion(s), red
  • 1 handful of herbs, oregano, thyme, rosemary, basil
  • 160 g cheese (Pecorino, medium-aged)
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with fresh rosemary, thyme, oregano and basil

Heat the olive oil. Peel and finely chop the onions, then sauté in the oil. Peel and finely chop the garlic cloves, then add them whole and sauté. Add the beef sausages, cut into strips, and fry. Then stir in the date tomatoes and simmer. Add the chili peppers (do not cut them), the oregano, basil, thyme, and rosemary sprigs, and continue simmering. Cook the pasta in plenty of salted water. Season the sauce with pepper and salt. Remove the garlic cloves, chili peppers, and rosemary sprig before serving. Serve the pasta on plates, top with the sauce, and grate fresh Pecorino over the top. Tip: You can prepare the sauce the day before; then it will be well-seasoned.
