Ingredients for 12 servings:
- 260 g flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 pinch of salt
- 100 g sugar
- 1 large egg(s)
- 235 ml milk
- 100 g butter, melted
- 2 tsp ground cinnamon
- 6 tbsp, levelled sugar, brown

Preheat the oven to 190°C (375°F), grease a muffin tin or line it with paper baking cups. For the cinnamon sugar, mix both in a small bowl and set aside. For the muffins, mix the flour, baking powder, baking soda, salt, and sugar. Melt the butter briefly in the microwave. Now whisk the eggs with the milk and butter, add the flour mixture, and mix everything well until a smooth batter forms. Now add a tablespoon of batter to each muffin tin, then a teaspoon of the cinnamon sugar mixture. More batter, and then top with the remaining cinnamon sugar. I then take a wooden skewer and rotate it in a circle inside each muffin to create a marbled effect. Now place the muffins in the preheated oven and bake for 18-20 minutes until golden brown. Let cool in the pan for 10 minutes. Be careful, as the cinnamon sugar will be very hot. Remove and place on a wire rack. The muffins are delicious both warm and cold.
