Ingredients for 1 servings:

  • 4 eggs
  • 2 cups sugar
  • 1 cup oil
  • 2 cans of mandarin oranges or other canned fruit of your choice
  • 4 cups flour
  • 1 packet of baking powder
  • 2 cups desiccated coconut
  • 1 cup sugar
  • 1 packet of vanilla sugar
  • Grease for the tray

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Drain the mandarins, reserving the juice. Using a hand mixer, combine the eggs, 2 cups of sugar, the oil, 1 cup of mandarin juice, the flour, and the baking powder into a batter. Pour the batter onto a greased baking sheet. Arrange the drained mandarins on top. Mix the desiccated coconut with the remaining sugar and vanilla sugar and sprinkle over the cake. Bake in a preheated oven at 180°C for about 30 minutes. Immediately drizzle the cream over the cake while it’s still hot.
