Mung bean sprout salad

Ingredients for 2 servings:

  • 250 g mung bean sprouts
  • 1 small onion(s)
  • ¼ red bell pepper(s)
  • 100 ml rice vinegar
  • 50 ml water
  • 50 ml oil, neutral
  • 35 g sugar
  • 1 tbsp soy sauce
  • some sesame oil
  • possibly salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the onion and thinly slice the bell pepper. Heat the vinegar, water, oil, sugar, and soy sauce in a saucepan. Cook the onion for about 3 minutes, then simmer with the sprouts for another 3 minutes. Add the bell pepper during the last minute. Transfer everything to a bowl, stir in the sesame oil, let it cool, and season again if necessary. We like to serve this salad with stir-fries.
