Ingredients for 1 servings:
- 250 g spelt flour
- 200 g wheat flour
- 2 large carrots, grated
- 21 g yeast
- 3 tsp salt
- 100 ml natural yogurt
- 1 tsp honey
- 150 ml water
- 1 egg yolk
- some milk
- 1 handful of oat flakes
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 50 minutes
Mix the flour and salt, add the carrots. Make a well in the center. Dissolve the yeast and honey in a little water, then pour it into the well along with the remaining water and yogurt. Knead into a smooth dough. Cover and let rise at room temperature until doubled in size. Transfer the dough to a loaf pan, cover, and let rest for one hour. Whisk the egg yolk with the milk. After one hour, brush the mixture over the bread and scatter the oats on top. Bake in the center of an oven preheated to 200°C (fan oven) for 40 minutes.
