Mushroom and ham ragout on potato slices

Ingredients for 1 servings:

  • 175 g potatoes
  • 100 g diced ham
  • 125 g mushrooms
  • 20 g onion(s)
  • 1 egg(s)
  • 1 tbsp rapeseed oil
  • salt and pepper
  • chives

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cut the unpeeled potato into slices (approx. 8 mm), place them in a baking pan or on a baking sheet, and place them on the middle rack of the oven. Preheat the oven to 200 degrees (top/bottom heat). After about 25-30 minutes, the slices will be golden brown and can be arranged on a preheated plate. 10 minutes after placing the potatoes in the oven, finely chop the onions and mushrooms. Heat a pan (preferably ceramic) (electric hob level 4). When the pan is hot, add the oil and, after one minute, add the ham and onions. After 2 minutes, add the mushrooms. After 3 minutes, turn off the heat, break an egg in a bowl, add it to the pan, mix, and season with salt and pepper. Spread the contents of the pan over the prepared potato slices and garnish with chives.
