Mushroom patties

Ingredients for 4 servings:

  • 4 rolls
  • 200 g mushrooms, fresh, mixed
  • 1 small onion(s)
  • 2 eggs
  • salt and pepper
  • 40 g breadcrumbs
  • 50 g fat
  • Marjoram, shredded

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Soak the rolls in cold water, squeeze dry, and place in a bowl. Remove the gills and skin from the mushrooms, scraping off smaller ones and only washing if necessary. When chopping the mushrooms, pay particular attention to removing any moldy bits. Finely dice the onion, melt a little fat, and sauté the onions and mushrooms in it, then let cool. Then add to the squeezed-out rolls, along with the eggs, salt, pepper, and marjoram. If the dough is too soft, add enough breadcrumbs to form flat dumplings. Coat the patties in flour and fry in hot fat for 5-6 minutes on each side until golden brown.
