Ingredients for 4 servings:
- 500 g potatoes
- 2 zucchinis
- 1 onion(s)
- 5 tbsp breadcrumbs
- salt and pepper
- 2 tbsp oil
- 2 tomatoes
- ½ cucumber(s)
- 8 leaves lettuce, small
- 1 jar pesto
- 10 cherry tomatoes
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Peel the potatoes, trim the zucchini, wash both, and coarsely grate them. Finely chop the onion. Mix everything with breadcrumbs and season with salt and pepper. Form 16 small patties, approximately seven centimeters in diameter, and fry in heated oil. Trim, wash, and slice the tomatoes and cucumber. Spread the vegetable and potato patties with pesto, top with lettuce leaves, tomato slices, and cucumber slices, and assemble into burgers. Wash the cherry tomatoes, cut off one top, remove the seeds, and fill with the remaining pesto. Serve the vegetable burgers and cherry tomatoes on plates.
