Ingredients for 4 servings:

  • 250 g flour (wheat flour)
  • 125 g margarine
  • 1 tbsp cream, 1 tbsp water
  • 2 onions
  • 3 cloves garlic
  • 500 g mushrooms
  • 1 lemon(s)
  • 125 g sour cream
  • 200 g cheese, grated
  • Soy sauce
  • salt and pepper
  • Olive oil (for frying)
  • 1 tbsp cornstarch
  • Cayenne pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Knead a shortcrust pastry from flour, margarine, 1 tablespoon of water, 1 tablespoon of cream, and a pinch of salt. Chill for 30 minutes. Finely chop the onions and garlic and fry in olive oil. Clean and thinly slice the mushrooms. Add them to the pan with the onions. Sauté for about 10 minutes and season with lemon juice, salt, pepper, cayenne pepper, and soy sauce. Line a greased springform pan with the pastry and raise one edge. Prick the bottom several times with a fork and bake at 225 degrees Celsius for about 15 minutes, until the part is light yellow. Add the sour cream and cornstarch to the mushrooms and mix in about 50 grams of grated cheese. Pour the mixture onto the pre-baked pastry case and sprinkle with the remaining grated cheese. Bake at 225 degrees Celsius for about 15 minutes.
