Mushroom salad, steamed in white wine herbs

Ingredients for 4 servings:

  • 1 kg mushrooms
  • 2 large onions, diced
  • 1 garlic clove(s)
  • 1 tbsp honey or sugar
  • 1 jar white wine
  • 1 pinch(s) of salt and pepper
  • 4 tbsp olive oil
  • 1 tsp, heaped herbs of Provence

Working time approx. 30 minutes; Total time approx. 30 minutes

Mushroom rillette

If possible, clean fresh mushrooms (leave small ones whole, quarter large ones) and fry them in hot oil. Once cooked through, deglaze with about a glass of white wine. Separately, fry the diced onions and add them to a bowl with the mushrooms. Crush the garlic clove and season with honey (or sugar), salt, pepper, and herbs. Let everything marinate well and serve with grilled meat or on toasted bread.
