Mushroom soup

Ingredients for 4 servings:

  • 100 g bacon, breakfast bacon in slices
  • 2 onions
  • 500 g mushrooms (birch boletus)
  • pepper
  • Salt
  • 4 tbsp flour
  • 20 g butter
  • 1 liter beef broth

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Simple but aromatic soup

Cut the bacon into thin strips and fry in a pan until translucent. Gently fry the chopped onions, then add the cleaned and coarsely chopped mushrooms and sauté for 10 minutes. Heat the butter in a saucepan, stir in the flour, and let it brown slightly. Deglaze with the beef broth while stirring, and bring to a boil. Then add the mushrooms and cook for a few minutes. Finally, season with salt and pepper.
