a fragrant side dish
Clean the mushrooms with a brush and slice them. Wash the spring onions and slice them into thin rings, including the green parts. Peel and finely chop the garlic. Deseed and finely dice a large chili pepper or hot pepper. Heat a non-stick pan well. Sauté the mushrooms. Before the mushrooms start to draw water, add the spring onions and the chilies. Reduce the heat. If any water starts to run out, continue frying until it has evaporated. Add the garlic. Add a splash of balsamic vinegar and a pinch of sugar. Then season with a few dashes of soy sauce and Worcestershire sauce. Finally, season with pepper. A wonderful side dish. If you want to make a sauce with it, simply add cream to taste and let it simmer a little. Wonderful with pasta or as a sauce for schnitzel.
