Mushrooms à la Grecque

Ingredients for 4 servings:

  • 500 g mushrooms, small or halved, cleaned
  • 8 small onions, peeled (or 2-3 normal onions, cut into thin wedges)
  • 2 tbsp olive oil
  • 1 beefsteak tomato(s)
  • 125 ml white wine
  • 1 tsp vegetable broth, granulated
  • 2 tbsp mustard (Dijon)
  • 1 tbsp tomato paste (if the tomato is very pale)
  • 1 garlic clove(s), grated or chopped
  • 1 large bay leaf
  • 1 tbsp pepper, green grains from the jar
  • 1 tbsp coriander, whole seeds
  • 1 pinch of cinnamon
  • 1 pinch(s) clove(s), ground
  • salt and pepper
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Spicy appetizer, easy to prepare

Sauté the mushrooms and onions in oil. Pour in the white wine and dissolve the broth. Score the tomato crosswise and pour boiling water over it. After about 1 minute, peel off the skin and roughly dice. Add it along with everything else. Simmer for about 20 minutes and reduce to the desired consistency. Season with salt, sugar, and pepper, if desired. The dish can be served warm or chilled. Baguette or flatbread goes well with it.
