Mushrooms with arugula on spelt penne

Ingredients for 2 servings:

  • 200 g spelt pasta, e.g. penne
  • 200 g mushrooms, brown, cleaned
  • ½ onion(s)
  • 100 g feta cheese
  • 100 g arugula, washed
  • 1 dash of cream
  • 1 tsp, heaped flour
  • 1 tsp vegetable stock powder
  • 1 small piece(s) of butter
  • some water
  • some pepper, black

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook pasta in salted water. Slice mushrooms. Dice onion and sauté briefly in butter. Dust with flour, deglaze with a little water, stir well with a whisk to avoid lumps, and stir in broth. Then add cream and mushrooms. Cover and simmer over low heat for about 5 minutes. Season to taste. Finally, dice feta and stir in. Transfer pasta to a plate and pour sauce over it. Stir arugula into the pasta.
