Mushrooms with egg

Ingredients for 2 servings:

  • 2 eggs
  • 200 g mushrooms
  • 125 g pork belly, smoked and diced
  • 1 onion(s)
  • 2 tbsp oil
  • ½ bunch parsley
  • 1 bay leaf
  • 1 garlic clove(s)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean and slice the mushrooms, then sauté them with the bay leaf in two tablespoons of cooking oil. Meanwhile, finely chop the parsley, onion, and garlic. When the mushrooms are half cooked, add the pork belly, onion, garlic, and parsley. Season the mixture with salt and pepper and cook for another 5 minutes, until the bacon is crispy. Remove the bay leaf and crack the two eggs into the pan. Set over low heat, stirring constantly. Serve with buttered bread.
