Ingredients for 4 servings:
- 12 mushrooms (giant mushrooms)
- 100 g mozzarella, finely diced
- 100 g cheese (Emmental), grated
- 100 g cheese (Gouda), young, grated
- 1 tsp marjoram
- 1 tsp thyme
- Salt
- Pepper, white
- 4 tbsp olive oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
as braised or grilled antipasti or as the finishing touch on a fresh salad, e.g. Italian bread salad
Remove the stems from the mushrooms. Mix the cheeses and herbs, and season to taste with salt and pepper. Stuff the mushroom caps with the cheese mixture and simmer in a large pan in hot oil with the lid closed for about 5 minutes, until the filling has melted. Serve immediately with baguette. Alternatively, grill the mushrooms for about 7-8 minutes.
