Ingredients for 4 servings:

  • 225 g peas, dried
  • ½ tbsp baking soda
  • some butter
  • Salt
  • black pepper

Instructions

Working time approx. 5 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 5 minutes

traditional English pea puree

Cover the peas with three times the amount of cold water and stir in the baking soda. Soak for 4-12 hours. Rinse three times with cold water. Place in a saucepan and cover with cold water. Simmer on low heat for 1.5-2 hours, stirring occasionally. The mushy peas should have a lumpy consistency (almost no water). Stir in a little butter, salt, and pepper and serve. Traditionally served in England with battered fish and chips. Or in small bowls with a little mint sauce.
