Mussels with buckwheat noodles

Ingredients for 3 servings:

  • 300 g mussels, frozen
  • 500 g buckwheat noodles
  • 1 tsp coconut oil
  • 100g bacon
  • 100 g celery
  • 2 m.-sized onion(s)
  • 1 chili pepper(s)
  • 1 tsp fish sauce
  • 1 can coconut milk, 400 ml

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cook the buckwheat noodles according to the package instructions. Finely dice the onions, celery stalks, chili, and bacon. Heat the coconut oil in a saucepan. Sauté the onions with the celery, bacon, and chili. Deglaze with the coconut milk. Bring to a boil and season with the fish sauce. Add the frozen mussels. Let stand for about 20 minutes, then add the noodles with a little pasta water and serve.
