Ingredients for 4 servings:
- 1 portion of pizza dough or pâte brisée, store-bought or homemade
- ½ jar mustard, medium hot, also grainy
- 5 tomatoes, thinly sliced
- 2 onions, cut into thin rings
- 1 large chicken breast
- 200 g cheese, grated
- 150 g cheese (Roquefort) or Gorgonzola
- salt and pepper

from France, for mustard lovers and anyone who wants to try something new!
Roll out the dough on a rectangular baking sheet and spread a generous layer of mustard. Arrange the tomato slices on top, covering the entire base. Sprinkle with onion rings and season with salt and pepper. Brown the chicken breast on all sides in a pan with oil (do not cook it all the way through, as it will continue to cook in the oven). Remove from the heat, let it cool, cut it into cubes, and also arrange it on the baking sheet. Sprinkle with grated cheese and blue cheese. Bake in the oven at 180°C fan/convection oven for about 20-25 minutes, until you have a moist and crispy mustard tart. A green salad goes perfectly with this. Tip: Pâte brisée is available in French supermarkets. It’s roughly equivalent to unsweetened shortcrust pastry. If you don’t like blue cheese, you can leave it out.
