My Caesar`s Salad

The perfect my caesar`s salad recipe with a picture and simple step-by-step instructions.

  • 250 g Romaine lettuce

For the croutons:

  • 1 Old bread or other white bread
  • 2 Toes Garlic
  • 1 branch Rosemary
  • 2 tbsp Butter
  • Salt

Dressing:

  • 1 Egg yolk
  • 125 ml Extra virgin olive oil
  • 2 tbsp Sherry vinegar
  • 2 Anchovies
  • 1 tsp Hot mustard
  • 2 tbsp Freshly squeezed lemon juice
  • Black pepper from the mill
  • 1 Splash Worcester sauce

Aside from that:

  • 4 disc Bacon
  • 50 g Parmesan in chips

Preliminary remark:

  1. There are a lot of myths about this salad. It is undisputed that it was invented by a senior Cardini in Tijuana, Mexico. My sister and I spent a long time researching the “original” recipe. And yet nothing clear could be found, even Wikipedia does not provide anything clear about this … because anchovies are probably part of the dressing ….. and also the bacon … but … who really knows …. that’s why here my origin variant … it also tastes delicious …

Dressing:

  1. Put all ingredients in a tall container and puree until creamy. The consistency should not be that of a mayonnaise but more liquid. Any leftover dressing can be kept in the refrigerator for a few days if chilled.

Croutons:

  1. Cut the old bread (or white bread) into small cubes. Heat a pan and add the pressed garlic and rosemary. Salt everything carefully. When the butter has melted add the bread cubes and fry them on a low heat while turning continuously.

Serving:

  1. Drain the bacon in a pan. Mix the salad with the dressing and arrange on plates. Spread the croutons and Parmesan shavings on top. Finally, put the bacon on top.
