My First Brisket – Beef Brisket on Weber Grill Low and Slow

- 2 kg Brisket
For the rub
- 2 tsp Garlic powder
- 2 tsp Onion powder
- 2 tsp Black pepper
- 2 tsp Coarse sea salt
- 1 tsp Hot peppers are hot
- 1 tsp Chilli powder
- 2 tsp Sweet paprika
- 1 tsp Coriander powder
- 2 tsp Oregano
- 2 tsp Brown sugar
- 2 tsp Pimento
Do the mopping
- 150 ml Apple juice
- 50 ml Apple Cider Vinegar
For packing and resting
- 100 ml Black beer
- Rub the beef brisket with the rub at least 2 hours beforehand and wrap it in cling film. Prepare the grill like in the video. Then put the brisket on and set a grill temp. set from approx. 100C. Don’t forget to insert the meat thermometer at the thickest point. I used cherry wood for smoking. After 2 hours, brush with the mixture of apple cider vinegar and apple juice for the first time. Repeat after about 2 hours. When the meat has a core temp. 93-96 C, remove from the grill, brush with black beer and wrap in aluminum foil. Let rest for 30 minutes to 60 minutes. Unpack and enjoy. This goes well with potatoes, beans or just white bread and salad.
