Ingredients for 3 servings:

  • 500 m.-sized potatoes, waxy
  • salt water
  • 2 garlic cloves, peeled, very finely diced
  • 2 onions, finely diced
  • 2 tbsp pesto (wild garlic pesto)
  • 3 tbsp oil
  • 2 tbsp vinegar
  • 1 tbsp balsamic vinegar
  • salt and pepper
  • some water

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Cooking/baking time approx. 45 minutes; Total time approx. 1 day 1 hour 5 minutes

with wild garlic and balsamic vinegar

Boil the potatoes in plenty of salted water for 45 minutes. Peel and slice. Season, add the diced onions and garlic, and mash the potatoes a little with a fork, then mix everything well. Now, using a spoon, add the oil, vinegar, wild garlic pesto, and balsamic vinegar, and mix. Let it sit for a day. Before serving, add a few tablespoons of water. Because the water absorbs a lot of water and dries out, add the water to make it more pliable and mix everything together.
