Ingredients for 2 servings:

  • 4 handfuls of nachos
  • 1 can tomato(s), chopped, 400 g
  • 1 onion(s), red
  • olive oil
  • 100 g cheese, e.g. freshly grated Parmesan)
  • Salt
  • e.g. chili flakes
  • 1 tsp, levelled sugar
  • 30 g tomato paste
  • Cayenne pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

quick, few ingredients and easy

Spread half of the nachos (preferably thick, homemade ones) on the bottom of a baking dish and set aside. Finely chop the onion and sauté in a pan with plenty of olive oil. Add the tomato paste and fry. When the onion has browned nicely, add the chopped tomatoes, a few chili flakes, mix well, and simmer gently for about 20 minutes. You should have a thick, chunky, salsa-like sauce. Now add the sugar, season with salt and pepper, and let the sauce cool slightly. Spoon half of the warm sauce over the nachos, spread a second layer of nachos on top, and pour the remaining sauce over the sauce. Spread the grated cheese (amount to taste; the 100g specified is only a guideline) and bake in a preheated oven at approximately 180°C (top/bottom heat) until the cheese has taken on a nice brown color. It tastes delicious, is really quick to make, and requires hardly any ingredients. Tip: There are great recipes for nachos here at CK. I make them with pure corn flour.
