Namura – Arabic semolina cake

Ingredients for 1 servings:

  • 250 g durum wheat semolina
  • 250 g natural yogurt
  • 200 g sunflower oil
  • 150 g sugar
  • 1 packet of baking powder
  • 350 g sugar
  • 1 tbsp lemon juice
  • 200 ml water
  • 1 tbsp rose water
  • 3 tbsp honey

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 5 hours 20 minutes

Mix all the ingredients for the dough in a bowl and let it rest for half an hour. Grease a 20 x 30 cm baking dish and preheat the oven to 180 degrees Celsius (top/bottom heat). For the syrup, bring the water and sugar to a boil, then add the lemon juice and let it simmer for about 5 minutes. Then remove from the heat and mix in the rose water and honey. Bake the cake for about 30 minutes, pour the syrup over it while it’s still warm and sprinkle with chopped almonds or pistachios. Let it rest for about 4 hours before eating.
