Ingredients for 6 servings:
- 10 rolls (old at least from the day before, better 1 week old)
- 0.38 liters of milk
- 4 eggs (or 6 if they are small)
- 75 g butter
- 100 g bacon, fat
- 60 g flour
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cut the rolls into cubes and place them in a large bowl, sprinkle with a little salt, and pour over the hot milk. Let them stand. Cut the bacon into cubes, fry them in a pan, and sift them through a sieve. Do not add the bacon to the batter. Gradually mix the creamed butter with the eggs and the fried bacon. Now pour it over the rolls and mix everything with the flour to form a firm dough. Using a cloth napkin or tea towel, shape the dough into an oblong loaf. Then tie the napkin together, hang it on a wooden spoon, and place it in boiling salted water. The “Eumel” should simmer gently for 60 minutes. Serve best with a pork roast (you need plenty of sauce) and a green salad. Enjoy! Enjoy!
