Arugula salad on a warm bed of cheese

Ingredients for 4 servings:

  • 1 bowl of arugula
  • 1 pack of feta cheese, cut into small pieces
  • 200 ml cream, can also be replaced with milk
  • ½ onion(s)
  • ¼ tsp oregano, dried
  • ¼ tsp basil, dried
  • 1 pinch of salt
  • pepper
  • Olive oil, cold pressed
  • Balsamic vinegar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the arugula and remove the stalks, then arrange on the plates. Finely chop the onion and cook in 2 tablespoons of oil until translucent. Now add the feta, cut into small pieces, and melt over medium heat, stirring constantly. Whisk the mixture with the cream until smooth. Add the spices and season with salt and pepper. Now pour a little olive oil and balsamic vinegar over the salad and cover with the warm feta sauce. Serve immediately. TIP: The sauce can be further refined and thickened by adding other cheeses, such as grated Edam or Gouda. A more liquid consistency can be achieved with a little water or milk.
