Napkin dumplings

Spread the love

Ingredients for 1 servings:

  • 4 rolls from the day before
  • 200 ml milk
  • 1 onion(s)
  • e.g. parsley, fresh
  • 2 eggs
  • salt and pepper
  • nutmeg
  • possibly flour if required
  • some butter for frying

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Dice the rolls. Warm the milk slightly. Place the rolls in a tall bowl, pour over the milk, and let them stand for about 20 minutes, stirring occasionally. In the meantime, peel the onion and chop it together with the parsley. Fry the onion in a little butter and add it to the soaked rolls. Add the parsley and eggs and knead everything together. Add the spices. Depending on the consistency, add a little more flour. Slightly moisten a cloth napkin and wring it out well. Place the mixture on it and form it into a roll about 6 cm thick. Roll up the napkin and tie the ends with string. Let it stand in boiling salted water, partially covered, for about 25 minutes (or prepare it in a steamer). Remove the dumpling and slice it. Serve immediately.
