Ingredients for 2 servings:

  • 1 can of tomatoes, peeled
  • some tomato paste, 3x concentrated
  • 1 handful of basil
  • 1 onion(s)
  • some olive oil
  • 1 clove(s) garlic
  • salt and pepper
  • 1 pinch(s) of sugar

an Italian classic

First, puree a can of peeled tomatoes with a little tomato paste. Dice an onion and sauté it with a clove of garlic in olive oil until translucent. Remove the garlic clove. Then add the pureed tomatoes and let the whole thing reduce on low heat for about 1 hour. You can add a little pasta water shortly before the end. Season and add salt and pepper to taste only shortly before the end. The same applies to the basil, as otherwise it could become bitter. Finally, add sugar to reduce the acidity of the tomatoes. We recommend preparing the sauce in a pan, as the larger surface area allows the sauce to reduce better and more evenly.
