Vegetable Sugo 'Mediterana'

Ingredients for 4 servings:

  • 1 pack of tomatoes, pureed
  • 200 g zucchini, sliced
  • 200 g eggplant(s) (aubergine), sliced
  • 3 onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 3 tbsp olive oil
  • 2 tsp thyme
  • 1 tsp sugar
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the onion, vegetables, and garlic in olive oil, then pour in the passata. Season with salt, pepper, and sugar, add the thyme, and bring to a gentle boil. Pairs well with almost any pasta dish.
